The production of bouchees, where soft cream and jam is sandwiched inside soft sponge cake, is fully automated with the Bouchee Line. It automatically lays paper sheets, deposits batter, applies powdered sugar, bakes, rolls up paper sheets, deposits filling, and sandwiches the filling.
