Enjoy pillowy and delicious pancakes!
We prepared this batch using a standard recipe.

Ingredients

  • Egg:480g
  • Superfine sugar:197.6g
  • Milk:320g
  • Salt:1.6g
  • Cake flour Violet (NISSHIN SEIFUN):720g
  • Baking soda:20g
  • Butter:80g
  • Water:120g

How to make the batter

First, melt butter over heat and let it cool.

Ensure the butter is melted over low heat to prevent boiling.

Thoroughly incorporate the whole eggs.
Follow by adding the superfine sugar and salt, mixing well, then pour in the milk and mix.

Blend thoroughly to break up the egg whites.
Continue mixing on low speed until the superfine sugar is dissolved, then maintain low speed after adding the milk.

Gradually add the sifted cake flour and baking powder, starting at low speed and increasing to medium speed.
Incorporate the melted butter, initially at low speed, then switch to medium speed, and adjust the consistency with water.

Throughout the flour addition, use a spatula to adjust the batter’s consistency.
The batter should be smooth with no lumps of flour.
Now, the batter is ready.
It should have an approximate viscosity of around 40 dPa/s and an approximate specific gravity of 1.00-1.10.

How to cook the batter

Set the Tabletop Pancake Cooker to 180℃.
Apply oil (Bitakatto SL) on the copper cooking surface.
Drop the pancake batter and put lid.
After 1 minute and 10 seconds, flip it over, cover again, and continue cooking for an additional 20 seconds (a total cooking time of 1 minutes 40 seconds).

You only need a little oil, applied thinly and evenly.
When there is too much oil, small dots will appear on the pancakes.
When you see these dots, try reducing the amount of oil used.
The pancakes are cooked nicely!
